A lady was cooking; and in this recipe there is: eggs or egg-whites, dijon mustard, orange zest and I believe water in a bowl. You take the chicken and dip it in this mixture, then coat the chicken with crushed almonds and something else. Then you cut away all of the orange pulp from the orange that you got the zest from and pan fry it. Now, this is all I can remember, and I am dying to know the rest of it. Please help!!!!

This is a nice tangy dish that the whole family will enjoy. Serve with rice and green beans.
INGREDIENTS:
4 medium skinless, boneless chicken breasts
1 1/2 tsp cornstarch
1/2 tsp finely shredded orange peel
1/8 tsp salt
1/2 cup orange juice
2 small oranges, peeled, skinned and chopped
PREPARATION:
Rinse and dry chicken breasts. Spray a large nonstick skillet with cooking spray. Cook chicken on medium/high until no longer pink - about 10-12 minutes, turning once.
In a small saucepan, combine cornstarch, orange peel and salt. Gradually stir the 1/2 cup orange juice into the cornstarch mixture. Cook until the sauce thickens, stirring constantly. Cook and stir for a further two minutes. Add the orange pieces and heat through.

To serve, place chicken on plates. Spoon sauce over chicken.

This is a recipe from weight watchers and it's REALLY good. It's called Orange-Crumbed Baked Chicken

2 Tablespoons Orange Juice
2 Tablespoons Dijon Mustard
1/4 teaspoon salt
3/4 cup whole-wheat cracker crumbs
1 tablespoon grated orange zest
1 shallot, finely chopped
1/4 teaspoon pepper
skinless chicken breasts

Preheat oven to 350
combine OJ, mustard and salt in one bowl. And crumbs, zest, shallot and pepper in another. Dip chicken in liquid then coat it in the crumb mix and put on a non-stick baking sheet. Turn breasts half way throw. Cook till they are at 180 degrees!
