I am bored of the recipes that I know. I am looking for some easy, unique recipes that are full of flavor. I do not eat any meat except for fish, so please only those recipes that I will eat:) My favorite types of food are Indian, Mexican, and Chinese, but I am willing to try anything different. Thanks for your help!

Tropischetta

1 can well drained pineapple tidbits (if you cant get tidbits, get rings and cut)
¼-1/3 cup olive oil
¼ cup? sundried tomatoes packed in oil (cut thinly in julienne style)
2-4 cloves chopped garlic
2/3 tbs of freshly chopped basil
(ALL “measurements” are approximate). If you are an experienced cook, you know what I mean. This is something I've always made from my head since I came up with it.

Heat oil in a skillet and then add well drained pineapple. Cook for a few minutes until pineapple starts to become soft. Add garlic and cook for a few more minutes, add tomatoes, cook for a few more minutes, add basil stir for another minute or so and remove from heat. Let cool to and place in a glass bowl. After it has cooled, cover and refrigerate.

Serve over fresh Italian bread… it can be toasted if you wish, but not necessary. Let me know if you can think of a better name for this. I came up with this about 5 years ago and never actually named it, but since it was inspired by bruschetta and is made with pineapple, I thought Tropischetta might be a decent name.

Chicken Crunch From: Campbell's Kitchen Prep Time: 10 minutes Cook Time: 20 minutes Serves: 4 Oven-fried chicken is crunchy with a coating of herb-seasoned stuffing. Ingredients: 1 can (10 3/4 oz.) Campbell's® Condensed Cream of Chicken Soup OR 98% Fat Free Cream of Chicken Soup 1/2 cup milk 4 boneless chicken breast halves 2 tbsp. all-purpose flour 1 1/2 cups Pepperidge Farm® Pepperidge Farm® Herb Seasoned Stuffing, finely crushed 2 tbsp. butter OR margarine, melted Directions: MIX 1/3 cup soup and 1/4 cup milk in shallow dish. Coat chicken with flour. Dip into soup mixture. Coat with stuffing. PLACE chicken on baking sheet. Drizzle with butter. Bake at 400°F. for 20 min. or until done. MIX remaining soup and milk in saucepan. Heat through. Serve with chicken.

Crab Supreme:

1 can Tomato soup
1/2 cup diet coke (any formula. I use the vanilla one)
1 cup grated cheese (Swiss is great but it calls for cheddar)
1 tablespoon corn starch
2 Tablespoons water
2 cups canned crab meat
1 cup buttered bread crumbs (you can seasoned, but unseasoned is good, too.)
grated cheese. (you can use 2 kinds in this recipe)

In a double boiler over hot, not boiling water (or with out it in a sauce pan) heat the soup and the cola. Add the cheese and cook, constantly stirring, until the cheese melts. Blend in the starch and water, then add the crab. Mix and place in a casserole pan. Top With the crumbs and grated cheese to cover. Broil until lightly browned ( it'd be a good idea, to empty anything stored in the broiler, first!) and serve over wild rice.

Well, I know a good Puerto Rican dish with codfish(salted)

use 1 pk (1lb) salted /cured codfish...soak it for 12 hrs or so, changing the water atleast 2 times.

chop up 1 potatoe
1 tbsp minced garlic
1c chopped onion
1/2c raisins
1 chopped red or green pepper
2Tbsp sofrito
1or 2c spaghetti sauce
Goya adobo seasoning to taste

saute' the onion and garlic in olive oil until transparent. add pepper and raisins- saute 2 more minutes. Add spaghetti sauce and sofrito, then codfish and potatoe- cook on med/low until potatoe is soft (atleast 20 min).
Serve with rice.

Oh my gosh! My absolute favorite meal in the world is Teryiaki Salmon cooked on the grill! Laury's has a thick marinade, I think it's called Teryiaki with Pineapple.....just marinade it for 1/2 hr. in a shallow dish on one side, then turn and marinade another 1/2 hr. Sam's or Costco has the best salmon, the large fillets....best with skin, it kinda gets crunchy when you grill it.....make sure you spray a little Pam on the grill before cooking your salmon. And it's very good with angel hair pasta with garlic, olive oil, fresh veggies cooked on the grill and crusty bread with a good Pinot Grigio wine.....please try this, I just know you'll love it. It's the only way I can get my family to eat fresh fish!

Well, if you eat eggs,
Wash, peel, quarter and boil brown potatoes until just soft, but not mushy.
While they boil, cut a mild yellow onion and saute it in butter, or butter substitute.
Whip 2 eggs and liberally salt and pepper. Add about 2 tablespoons milk then slowly add in flour until you have a mix about the consistency of play dough.
Take a spoonful at a time of your egg dumpling mixture and drop it into the boiling water. You are going want these to boil about 15 minutes so your timing could be tricky here.( I have a friend who boils her potatoes then takes them out and boils the dumplings in the water by themselves.)
When done, drain and pour the onion butter mix over it and toss. Lightly salt and pepper and you have delicious "German Dumplings" just like my grandmother used to make. Serve with a fresh salad.

Mixed greens with soft goat cheese, nectarines or peaches, and almonds. Dress with a little apple cider vinegar, salt and pepper.
It's soooo easy.

spice fish fillet with garlic , salt and lemon leave them for 2 hours then put them in some flour then fry them or bake them in oven.

u can also get some mixed vegetables , add some salt and pepper ,chop onion add some water and tomato sauce and boil till cooked
