Start with really fresh ingredients. For a small batch i start with 2 lg. avacados, add 1/2 of a small chopped onion, 1/4 cup of cilantro, 2 cloves of garlic chopped fine, a tablespoon of lemon or lime juice, 1 small jalapeno pepper chopped fine, one small roma tomato chopped and salt added to taste. For an added touch serve with homemade tortilla chips and your favorite margarita!

1 teaspoon salt
lemon juice to taste (at least 1 tablespoon, can be 50/50 lime juice)
Medium chop the tomato & onion
scoop out gaucamole and mix in with rest of ingredients mashing together. Tastes best if refrigerated for 1/2 - 1 hour before.

The best ones are simple. Avocado, cilantro, lemon or lime juice, chopped onion if you want.
