SPAM Casserole

Ingredients:
1 (12-ounce) can SPAM luncheon meat, diced
1 (10-3/4-ounce) can cream of chicken soup
1 (10-3/4-ounce) can cream of mushroom soup
1 small chopped onion
1 small can chili peppers, chopped
1 bag white tortilla chips
1 (16-ounce) package shredded Cheddar and Monterey Jack cheese

Cooking Directions:
Mix SPAM, soups, onion and chili peppers. Crush tortilla chips and layer on the bottom of a large casserole dish. Place SPAM mixture over chips, then add a layer of cheese. Repeat layers, ending with cheese. Bake at 350° F oven for 25-30 minutes.

Enchilada Pie

Ingredients:
1 (12-ounce) can SPAM luncheon meat, diced
1 cup chopped onion
1 teaspoon salt
¼ teaspoon pepper
1 tablespoon chili powder
1 (8-ounce) can tomato sauce
6-8 flour tortillas spread with butter
1 (4-1/2-ounce) can ripe olives, chopped
1-1/2 cups sharp or mild shredded cheddar cheese
4 ounces water

Cooking Directions:
Brown SPAM, onion and seasonings. Add tomato sauce. In a casserole, alternate layers of tortillas, meat sauce, olives and cheese. Add water. Cover and bake at 400° F for 20-25 minutes. Serves 6.

Kid Friendly SPAM Pizza


Ingredients


2 10.6-oz packages of refrigerated Italian breadsticks with garlic
2 cups shredded Italian cheese
1 4-oz can mushrooms sliced
¼ cup minced onions
½ tsp red pepper flakes
1 12-oz. can of SPAM
½ cup pepperoni sliced
1 container of prepared pizza sauce
Olive oil to coat pan



Cooking Directions


Open cans of breadsticks and break them apart as per package instructions. Cut each stick into 4 pieces and put into a large bowl. Add 1/2 of the pizza sauce, 2 cups of the cheese, mushrooms, red pepper flakes and lightly mix. Cut SPAM in half lengthwise from top to bottom, lay SPAM down and cut in half again from side to side. You should have 4 pieces that are 1” x 1 1/2” x 4”. Slice into thin slices. If children are too small for knives, let them break SPAM up with their hands. Add SPAM to the bread mixture along with Pepperoni slices; mix. Pour pizza mixture into a greased 15-inch pizza pan or stone. Spread mixture to within 1/2 inch of the edge. Pour remaining half of pizza sauce on top and cover with 1 cup of cheese. Bake at 400 degrees for 30 minutes.

I surely hope you mean the canned variety and not the computer version LOL! Darn chips are hard on my fillings, but the gold is good for my joints!

Open can, slide out Spam.
Drain on paper towel.
Slice in 3/4 inch slices
Brush with your favorite Bar-b-que Sauce
Gently poke holes in with a fork to get sauce into spam
Grill on Bar-b-que grill (no foil) for 3-5 minutes, turning over so they don't stick (about the same amount of time as a hot dog)

Serve with potato salad, or macaroni and cheese.

Yummy!

I make a grilled sandwich with the sliced Spam. You grill the Spam slices, pineapple slices and toast the buns. I add lettuce and chipolte mayo.

Fry it and serve it with eggs and hash browns as a breakfast.

For all our joking, Spam is actually rather good food!

Just slice a bit thinly and fry, then when browned enough, top each slice with a half-slice of cheese. Can eat as is or make sandwiches.

No butter... just throw it in the pan to fry it up. Trust me, there is plenty of grease. I like it with eggs and toast. I miss my mornings from the poor days...

personally the only way that i will eat it is cut into cubes and added in macaroni and cheese
