I have eaten Croc twice and both times it came with a different sauce one was a creamy Tartare type sauce which was O.K but possibly detracted from the taste but the second time i had it it came with a cajun/BBQ sauce and that was delicious ! so possibly a sauce that isnt too sharp so it doesnt mask the taste of the meat.

Crocodile tastes similar to chicken but with a mild fish flavor. The tail is definitely the best part. This is how Chef Anthony Hendre prepares it in Port Douglas in Far North Queensland, Australia

I think I might like this...
400 g crocodile, in 2 cm cubes
40 ml lime juice
200 ml chicken stock
30 ml honey
30 g brown sugar
5 g ginger, finely diced
30 ml oil
10 g cornflour
salt and pepper
8 bamboo skewers

Croc is a very bland white meat so spice it up as you would chicken. Marinade it with olive oil and lemon Sizzle on a pan until coloured all over then add in sliced peppers, onion, chopped garlic plus a chopped carrot a stick of celery and a bay leaf. Add a dash of white wine and cook as you would a chicken breast.
Or sesame oil and smoked paprika with garlic, chopped fresh ginger, onions a good splash of Angostura bitters and some Mirin or dry sherry. Cook as above. There are loads of possibilities.
I find it a dull meat and can't quite be easy with meat-eating meat, preferring herbivore meat instead.

A thick wine sauce with butter and then add a pinch of salt fry the gator and contiune as wanted yumyum

I think a nice thick mushroom sauce with lots of mushrooms, onions, celery, carrots sounds perfect.

well i have never had any croc. so i don't really know. my guess is depending on how you cook it i would use a bar-b-q sause w/ some lemon juice and a touch of red wine
