~~~~My Egg Salad~~~~

4 hard-boiled eggs
2 tsp. regular mustard
1/2 tsp. black pepper
1 tsp. cider vinegar
2 tsp. pickle relish
salt to taste
enough mayo to hold it together (spoon full)

Peel cooled boiled eggs. Mash or dice eggs and add ingredients. Mix and eat~

The vinegar is key or it will taste like potato salad without the potatoes~~~~~ :)

The way I know how to do egg salad and it is yummy is;

Mash the boiled eggs, add a pinch of salt, 1 tsp curry, 1/2 tsp mustard, 1 small onion chopped, and if you like some celery (I choose not to do the celery). Mix everything together and then add some Mayo (the good stuff) and eat until your content.

6 Hard-cooked eggs -- chopped
1/2 cup Finely chopped celery -- Lettuce leaves or br

In a bowl, combine mayonnaise, lemon juice, onion, salt and pepper.
Stir in eggs and celery. Cover and chill. For each serving, spoon about
1/2 cup onto a lettuce leaf or spread on bread.

Egg Salad:


INGREDIENTS:

* 8 eggs
* 1 tablespoon mayonnaise
* 2 tablespoons prepared Dijon-style mustard
* 1 teaspoon dried dill weed
* 1 teaspoon paprika
* 1/2 red onion, minced
* salt and pepper to taste

DIRECTIONS:

1. Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
2. In a large bowl, combine the egg, mayonnaise, mustard, dill, paprika, onion and salt and pepper. Mash well with a fork or wooden spoon.
3. Serve on bread as a sandwich or over crisp lettuce as a salad.

This is mine:

4 hard-cooked eggs, chopped
1 tablespoon prepared yellow mustard
1/4 teaspoon celery powder
Salt and pepper to taste
1/4 cup mayonnaise
Mix together first 4 ingredients, gradually adding mayonnaise until salad has the amount of moisture for your taste. Taste for flavor.

I dint dread peeling eggs anymore. And No more waiting to peel eggs. Let me know if this helps!!! I got this from the Joy Of Cooking cook book.

ingredients==
6 eggs
1 hot water

6 servings Change size or US/metric
Change to: servings US Metric

15 minutes (timing)

procedure==
place eggs in pan with water and bring to a boil.
boil for 12 minutes.
fill a medium size bowl with cold water and a trays worth of ice cubes.
place eggs in ice water after the 12 min for 2 minutes and keep water in pan boiling or bring back to a boil.
Gently drop eggs back in boiling water for 30 seconds to 1 minute.
they are ready to peel I put them back in the ice cold water again just to cool off for a minute.
So easy and I do it every time now! I got this from the Joy Of Cooking cook book.

ingredients
1/2 medium red onion, chopped
12 large eggs, hard boiled,peeled and cut into sixths
1 stalk celery & leaves, chopped
1/2 cup plain yogurt or mayonnaise
2 tablespoons chopped fresh dill
2 tablespoons whole-grained mustard
4 teaspoons freshly squeezed lemon juice
2 teaspoons kosher salt

4 servings 4 cups Change size or US/metric
Change to: cups US Metric

35 minutes 10 mins prep .

procedure
In a large bowl, mix together the onion, celery, yogurt or mayonnaise, dill, mustard, lemon juice, and salt.
Add the eggs to the mixture and gently mix them together.
Season with pepper to taste.
Use in sandwiches, with lettuce and tomatoes, or in a salad.

Boil the eggs for 5 minutes, cool them, peel and mash. Add minced pickle, onion, celery, salt & pper and salad dressing and mix thoughly. Wahla... egg salad
Skip the lemon juice bit... you want egg salad not lemonade....

Hard boiled eggs, salt&pepper, chopped red onion and sour cream. Chop the eggs and mix in the rest to taste.

hey this one is an old one frm my mom
take boiled eggs mash themadd 1/2 tsp buter,2tbps mayonse,,1/2 tsp pepper,1/2 slit green chilli,toss evry thin wit leuce add grated cheese and say yummm!!![this can also be used as a sandwich spread!!]
