it's not a tender cut, so I'm reluctant to try stir frying with it. Need to serve it in 3 hours so not enough time to tenderize by marinating.

Either Swiss Steak or Salisbury Steak would be braised in liquid/gravy, and either is very good. (Swiss steak=tomatoes, Salisbury=mushrooms & brown gravy)

To answer your question. Marinating is a waste of time and ingredients and is for the most part over-rated. In three hours you could make a 10 lb. pot roast or if using steaks the equivelant weight in swiss steaks. What you need to do is to brown and braise the round..
You will need :
The piece of round in question
any vegetable oil but olive
A handful of diced carrots
A handfull of diced celery
2 handfuls of diced onion
a bay leaf or two- make sure you take the same amount out that you put in.
a cup of red wine - DO Not USE COOKING WINE!! - it contains an obscene amount of salt.
liberal amounts of salt and pepper.
a dutch oven or similar pot that is oven proof !! making sure that it has a tight fitting lid
How it's done:
Pre-heat oven to 300 F
pre-heat pot using medium high heat
Meanwhile......... mix your salt & pepper together 80% salt 20% pepper- it should look like a white grey
rub all over your round
Add enough oil to cover the bottom of the pot and brown all six sides of the meat..
Adjust heat and add oil as needed.
you want to keep it just below the smoking point
.When the meat is all brown remove from heat
and add vegetables
cook until onions are translucent
Add wine taking the time to stir up all those nice little brown bits from the bottom- aka deglazing
return meat to pot and add enough liquid ( water or beef stock) to barely cover the meat.
add bay leaves
put on the lid and let cook in the oven for at least an hour or until the meat is really tender.
you can also do this stove -top just keep the heat at a simmer .

just season it with garlic salt and pepper cut it up into serving portions and cook it over medium high heat in a frying pan till it's about medium inside(pink) don't over cook or it will be tough. Sautee some onions in the pan drippings and you could make some brown gravy too if you like serve it with rice or garlic mashed potatoes and a nice green salad. My mom used to make this and I do too. Its really good...but don't overcook that meat.

Try a beef tip and noodle dish.. very simple and quick. serve with green beans and a crusty bread! If all else fails.. call the pizza guy!
