My brother used to catch river cooters and we sold the turtle meat. He always did the cleaning and I am curious as how you remove the shell, the other cleaning I paid attention to. I know it has to be a very sharp filet knife but I need to know where to cut to remove the shell.

You can slide a sharp knife into the crack between the upper plates (the dome-shaped bit) and the lower plates (the flat, whitish bit on the bottom), and prise them apart.

I helped clean a turtle once. Basically I held the turtle and watched. The fella cracking the shell used a mallet and railroad spike to crack the bottom of the shell. It is nasty business, but the reward is delicious!
