Food poisoning can kill. It's not about being nice- especially if they repeatedly fail and don't resolve the issues. I've been around restaurants that are horrifying in terms of cleanliness and basic hygiene. Awful. I know that you have lists but ensure you communicate the enormity of the problems and dates that they need to have them fixed by.

Well , a health inspector shouldn't go ragin about yelling and screaming so I guess he/she should be kind. yeah, like the first guy said, he should stay proffessional.

You should remain courteous and business like.
It's tough, i know, but ignore any insults/rudeness and conduct your inspection with a minimum of conversation.

keep being polite and professional, as you continue to fail them. eventually they'll be out of business and you won't have to deal with them. but you're supposed to be professional regardless of how they are acting.

he/she doesn't have to be nice he/she just needs to be sure the restaurant follows the guidelines or close down.
