Can't ask Mom - she passed away years ago. The onions and potatoes are grated - RAW (not cooked) - and mixed with flour, salt, pepper, and ???? to hold them together. She then molded them into balls and dropped them into a deep fryer until golden brown. I can't get the mixture into a consistancy to hold together. What am I doing wrong or missing that would work.

Potato Balls - A Greek recipe

1/2 kilo potatoes
1 Tbsp. butter, melted
4 Tbsp. flour
1 tsp. each parsley and green onion, chopped finely
2 cloves garlic, crushed
salt and pepper to taste
deep hot oil for frying

In a large pot with an ample amount of water boil the potatoes in their skins until they are soft throughout. Run under cold water, peel the skins and refrigerate, covered, until well chilled.

Run the cold potatoes through a sieve and add the flour, melted butter, garlic, parsley, green onion, flour, salt and pepper to taste (do not be afraid to use plenty of pepper in this recipe). Knead the mixture lightly until it is smooth throughout and form into balls about 1 1/2" (4 cm.) in diameter. Gently drop these into deep hot oil and fry until they are golden brown on the surface. Serve hot.


Where I grew up in north central Iowa, the Germans had a simpler method which my dad and I adopted. For each cup of left over mashed potatoes, add 1/3 - 1/2 cup of chopped onions. Make into a patty about 3/8 of an inch thick. Fry 3-4 slices of bacon. Fry the potato onion patty in the left over bacon grease til crispy on each side.

Back then, we didn't worry about cholesterol and calories. 8-)

you can try this,,just omit the meat if you don't like meat, it is not balls,it is flat like burgers. but you can make it like ball shape ...Korokke is Japanese croquette with vegetables and meat.

INGREDIENTS:
1 lb potato
1/4 lb ground beef
1/2 onion
1 egg
1/2 tsp salt
pepper to season
vegetable oil for frying
flour and panko (breadcrumb)
PREPARATION:
Peel and cut potatoes into medium chunks. Boil potatoes until soften. Mash potatoes. Mince onion and saute in a fryin pan. Add ground beef in the pan and saute. Mix mashed potato and onion and beef in a bowl. Season with salt and pepper and mix well. Make flat and oval-shaped pieces. Coat each piece with flour. Dip in beaten egg. Coat with panko. Fry in 350 F oil until brown.
*Makes 4 servings
