both are correct but both have very subtle meaning differences.
all i want to do is to sleep implies that you haven't slept and want to.
all i want to do is sleep implies that you sleep a lot and don't want to do anything else.

The first one uses SLEEP as an active verb, the second one uses SLEEP in its infinitive form, and in this context it functions in the manner of a noun.
In the first construction,to DO functions as an auxiliarry (or helping) verb. In the second construction DO is the active verb.
Gramatically - they both have their place, neither is incorrect; but there is a subtle difference in meaning. The first suggests an immediacy of the desire for sleep, the second suggests a priority in the desire for sleep.
Though both constructions are gramatically acceptable - the first might suggest that you are TIRED, the second might suggest that you are LAZY.

The second one is correct.
The first one includes a full infinitive as object, which is not recommendable. The second one uses a deverbal noun as an object, which makes it far more acceptable.
Please note that English is my second language and therefore I studied it a lot harder and I know a lot more details about it than native speakers do, because they take it for granted. I think about what I say first of all...

I think either is correct. In the first, the word "go" is implied as in... "All I want to do is go to sleep."
