for every quart of sauce add about 1/2 cup more if its a mellow wine like a Chianti and less if its a Cabernet. Make sure to cook most of the alcohol out before tasting.

I prefer cella Lambrusco, as much as to taste I supose this would depend on How much sauce is Made, start with a good splash of it and then let simmer a minute and taste, repeat process till you are satisfied.

I'm assuming you mean the sauce. You don't want to overdo it, as it will overpower the flavor eventually. I usually use a couple of tablespoons worth. (I'm guessing here, because I don't actually measure it) And, it depends on how much sauce you have. Go with 2 tbls and taste.
