Easy Lasagna III
Cook Time: 30 Minutes Ready In: 1 Hour
Yields: 7 servings
"Flavorful, steaming hot lasagna in one hour."
INGREDIENTS:
10 ounces lasagna noodles
1 1/2 pounds lean ground beef
3 cups cottage cheese
2 eggs
1 teaspoon garlic powder 2 tablespoons dried parsley
salt and pepper to taste
1 (6 ounce) can tomato paste
2 (6.5 ounce) cans tomato
sauce
DIRECTIONS:
1. Preheat oven to 375 degrees F (190 degrees C).
2. Bring a large pot of lightly salted water to a boil. Add lasagna noodles and cook for 8 to 10 minutes or until al dente; drain.
3. In a skillet, brown ground beef. Using a fork, mix cottage cheese, eggs, garlic powder, parsley, salt and pepper. In a separate bowl combine tomato paste and tomato sauce.
4. In a 9x13 inch baking pan, layer noodles, ground beef, tomato sauce mixture and cottage cheese mixture. Two layers of each will fit. Cover with tin foil and bake for 30 minutes. Remove tin foil the last 8 minutes of baking time.

I suggest Pot Roast as you can just set it and forget it. That gives you time to prep yourself and dessert.

Here is a basic pot roast recipe. Cut the recipe to suit your party. Feel free to substitute/subtract stuff you don't like. I usually just have mine with potatoes and light carrots.
BASIC POT ROAST
1/4 cup flour
1 teaspoon salt
1/4 teaspoon pepper
5 pound rump of beef
2 or 3 tablespoons fat or oil
2 onions, sliced, or 10-12 small white onions, peeled
1 or 2 carrots, scraped and cubed
Herbs and other seasonings as desired
1 cup liquid (wine, bouillon, tomatoes, vegetable broth, etc.)
Other vegetables as desired
Season the flour with the salt and pepper and pound the mixture into the meat with the edge of a plate. Brown meat on all sides in the hot fat or oil. Add the onions, cover and cook over low heat 10 minutes. Add the carrots, herbs, seasonings and liquid. Cover tightly and simmer 3 1/2 - 5 hours, until meat is fork tender. Add desired vegetables during the last 20 or 30 minutes.
Pot Roast Variations
1. For part of the liquid, use a 10-ounce can (1 1/3 cups) of puréed tomatoes. For seasoning, add 1 tablespoon minced parsley or dill. When the meat has been removed from the pan, add 1 cup sour cream to the sauce.
2. For the liquid, use 3/4 cup dry white wine, 2 tablespoons brandy or rum, and 1 tablespoon chili sauce. For seasoning, add 4-6 coriander seeds and 12 peppercorns.
3. For the liquid, use 1/2 cup syrup from canned fruit, 2 tablespoons vinegar, 1/2 cup water, 1 beef bouillon cube. For seasoning, add a pinch of powdered fennel and a teaspoon of minced dill.
4. For the liquid, use half dry vermouth, half chicken bouillon.
Makes 6-8 Servings, with some meat left over.

With pot roast being so filling, I wouldn't make anything else than a salad as a side dish.
For dessert, might I suggest something light and easy - Chocolate Mousse with whip cream and strawberrys.

MARVELOUS CHOCOLATE MOUSSE
300 g (1 1/2 cups) dark chocolate, chopped
2 tablespoons milk
6 egg yolks
100 g (scant 1/4 cup) confectioner's sugar
500 ml (2 cups) thickened cream
Fresh berries (optional) to serve
Place chocolate and milk in a heat proof bowl, set over a saucepan of boiling water and stir constantly until melted and smooth (mixture will be quite thick).
Remove and cool slightly. Place yolks and sugar in a large bowl and beat with an electric mixer for 5 minutes, until thick and creamy.
Beat cream with an electric mixer in a bowl then gently fold through chocolate mixture with a spatula until just combined.
Spoon into 12 x 1/2 cup capacity dishes and chill for 4 hours, until set. Serve with fresh berries if desired.
Serves - 12 Preparation Time - 15 minutes Cooking time - 5 minutes Chilling time - 4 hours

There are always ways to cut down on prep time (by fully cooked roast - with instructions or a box of mouse mix, cool-whip and such) to help you save time, money, and energy.

CHICKEN DIVAN
3/4 lb. boned skinned chicken, cut into pieces
2 tbsp. oil
1 pkg. (10 oz.) Birds Eye deluxe broccoli florets
1 c. chicken broth
2 tbsp. sherry wine
1 can (10 3/4 oz.) condensed cream of mushroom soup
1 1/2 c. Minute rice
Grated Parmesan cheese
Brown the chicken in the oil until cooked, about 5 minutes. Add the broth, wine, broccoli and soup; bring to a boil. Stir in rice, cover and remove from heat. Let stand 5 minutes. Top with Parmesan cheese. Makes 4 servings.
CELEBRATION FILET MIGNON
1/2 lb. mushrooms
1 lg. tomato
Butter
1 lg. onion
3/4 slices 4 beef tenderloin steaks (filet mignon)
1/2 c. water
2 tbsp. prepared mustard
4 tbsp. capers, drained
Cut 4 thick center slices from tomato. In pan over medium heat with 1 tablespoon butter cook tomatoes until heated through. Remove and reserve. In 2 tablespoons butter cook onion until tender. Remove to bowl.
In same pan with drippings, cook mushrooms and steak over medium-high heat until desired doneness, about 6 minutes for rare. Place 1 steak on each tomato slice; keep warm. Into remaining drippings, stir water, mustard, and capers over medium heat; cook, stirring until mixture thickens. Pour over and around steaks.

If you cook ANYTHING that he likes that will be romantic enough. I can say from personal experience that when my ex cooked for me, I pretended that I liked it even though it tasted like crap. I was just impressed by the fact that she cooked for me.
