First make a white sauce, two Tbl butter melted in a sauce pan stir in Two Tbl flour and salt and pepper, stir till smooth, add one cup milk stir it in,bring to a boil for one minute then add two cups shredded Vermont White super sharp Chedder cheese and stir in until melted remove from heat.

For making macaroni and cheese I am very picky about the type of cheese. I like only that from wisconsin with the red wax on it called red wax cheddar. I take a 2 tablespoons of butter and 2 tablespoons of all purpose flour and I cook them together then I add 1 cup of whole milk and 1 cup of heavy cream and I bring it just under a light boil and I add one pound of grated cheese and I remove it from the heat. I mix it with already boiled macaroni(I prefer penne) and then I stir it up and cover it with another half pound of cheddar. I think this process works for other cheeses too. I tried it once with a mixture of gruyere and romano and the result was delicious.

INGREDIENTS:
3 tablespoons butter
3 tablespoons all-purpose flour
3 cups milk
1/3 cup crumbled Gorgonzola cheese
1/4 teaspoon salt
1/4 teaspoon black pepper

DIRECTIONS:
Melt butter in a medium saucepan over medium-low heat. Stir in flour, then milk. When mixture begins to thicken, stir in cheese. Cook until cheese is melted and sauce reaches desired consistency. Season with salt and pepper.

Melt down some velvetta in a crocok pot and you have 3 options leave it plan, add salsa or add ground beef that has been fried and has taco seasoning in it.
