Gelatin and sugar, for two of the ingredients. Don't know how they're made, go to Food Network and scout around, somewhere there should have been a program about mallows. Website is www.foodtv.com. Try the show Unwrapped.

2 c. granulated sugar
3/4 c. water
2 tbsp. gelatin
1/2 c. cold water
1 tsp. vanilla
1/2 tsp. salt
Cornstarch
Confectioners sugar
Mix granulated sugar with 3/4 cup water. Simmer to soft ball stage. Remove from fire. Soften gelatin in cold water. Place on large platter. Pour hot syrup over softened gelatin. Stir until dissolved. Let stand until partially cooled. Whip until thick and white, and mixture will nearly hold its shape. Add vanilla and salt. Pour into straight sides pans lined with equal parts of cornstarch and confectioners sugars, mixed together. Let stand in cool place until firm (not in ice box). Cut into squares with scissors and dust with confectioners sugar.

you have received some good answers which are correct enough, but i have one which is probable unexpected. marshmallows were originally made from the marshmallow plant, more commonly refer-ed to as the mallow plant. i am not making this up, just type in the words marshmallow plant if you do not believe me.
