Being in CA we have them and asparagus a few times a week and have found that you can use the same sauces for both.
We enjoy them both warm and cold with a store bought wasabi mayo. or lime mayo. many times I'll serve chokes with 2 or 3 different sauces just for the variety.
When eating them warm or grilled we'll make a lemon-garlic butter sauce that's easy to make and to use as a base to add your own touches to. (1 cup melted butter,1 tsp lemon zest,
2 Tbsp lemon juice, 2 cloves of crushed garlic,pepper to taste.)Melt butter and add all ingredients to pot and simmer until blended.Quick and good!
A well made Hollandaise Sauce or Dill Sauce are also great with artichokes and asparagus.

1/4 cup mayo (not light or fat free)
1/4 cup light or regular sour cream (do not use fat free)
1 T fresh lemon juice
Steam artichokes. (I like to cut them in half and cut the "choke" part out first.) when artichokes are done, drain and let them cool slightly as you mix dip ingredients together. Serve dip with warm artichokes.

Artichokes are a wonderful, tasty, healthful food... so please don't gunk it up with an overbearing sauce loaded with fat and sodium and chemical junk. All you need is a simple mixture of extra virgin olive oil, fresh squeezed lemon juice, and a little crushed garlic. Then you can really still taste the artichoke!
