INGREDIENTS:
1 leg of lamb, about 5 to 6 pounds
salt and pepper
3 to 4 garlic cloves, crushed
1 can (10 1/2 ounces) condensed beef broth
1 soup can water
2 tablespoons vinegar
1 onion, sliced
PREPARATION:
Rub leg of lamb with salt, pepper, and crushed garlic. Add beef broth, water, vinegar, and onion slices to the roasting pan. Insert meat thermometer into thickest part of the lamb, not touching bone.
Put lamb in preheated 450° oven and bake for 15 minutes.
Reduce heat to 350° and continue roasting until thermometer registers 145° to 150° for medium-rare, or 160° to 170° for well-done. Serve garnished with fresh parsley, if desired. If desired, simmer and reduce drippings, skim fat, and serve with the lamb.
Serves 8.

heat the oven while u are waiting push some fresh rosemary into the leg of lamb then push 2 garlic cloves into the lamb roast in hot oven 180 cel for 30 mins lower heat to 150 continue roasting for at least 1 hour depending on size cook until pink inside take out of oven leave to rest before carving good luck

5-6 lb. leg of lamb
2 garlic cloves, thinly sliced
1/4 cup olive oil
1 Tablespoon chopped fresh thyme (leaves only)
2 teaspoons chopped fresh rosemary (leaves only)
1 teaspoon salt
1 teaspoon freshly ground black pepper
Preheat oven to 425°F.
Make 8 to 10 small cuts in the lamb and insert garlic slices.Rub olive oil all over the leg. In a small bowl, mix together the thyme, rosemary, salt and pepper.
Transfer herb mixture to a large plate. Roll leg of lamb into the herb mixture until well-coated.
Place leg of lamb in roasting pan and roast for 20 minutes. Reduce heat to 350°F and roast for another hour or until a meat thermometer reads 130F (medium rare).
