Specifically women who are happily engaged... I'm just wondering if it symbolizes something special.

In some countries that's where they place an engagement ring. IE the middle finger

People generally wear the ring on the ring finger as they say that there's an artery on the ring finger which runs directly to the heart.
Otherwise, it doesn't really matter which finger you wear your ring on.
As long as the couple are happy together, it's ok. The ring is only an outward symbolic expression.

It means that they don't want to let their ring out of their sight long enough to get the ring sized.

It either means its too large and they don't want to let go of the cash or whatever to get it sized, or maybe they just like it there to be a bit original
