8 flour tortillas, 2 cups of cooked chicken breast, 1/4 cup onion, 2tbs butter, 3 oz cream cheese, 1tbs milk, 1 cup of milk 1/2 tbs salt, 1/4 tbs cumin 8 oz sour cream, 5 diced jalapenos,1lbs grated cheese 1 can cream of chicken soup(15oz).
In a pan cook onions and butter. Place in a bowl and add 1tbs milk, cream cheese, salt, cumin, chicken, and some grated cheese.Mix together. Roll in tortillas.
Sauce: Can of cream of chicken, sour cream, 1 cup of milk, dice jalapenos, mix together well. pour over enchiladas.
Cover with foil and bake 35 min on 350 degrees. Remove foil sprinkle grated cheese and bake 5 more min or until cheese is melted.( No foil)

Recipe Ingredients:
12 to 16 Mission® Flour Tortillas (or Mission® Corn Tortillas)
4 large Chicken Breasts* cooked and cut up in small pieces
2 cans Cream of Chicken Soup
8 oz. can Green Chiles diced
1 pint Sour Cream
2 cups Monterey Jack Cheese grated
2 cups Sharp Cheddar Cheese grated
1 small can Black Olives sliced
1 small Onion grated
8 Green Onion Tops chopped
1. Combine soup, onion, green onion tops, sour cream, Chiles, and black olives. Add most of the cheeses, saving some for the top. Set aside 1 cup of this mixture without the chicken. Then add the cut up chicken to the remaining mixture.
2. In a 9 x 13-inch greased shallow baking dish, fill each tortilla with some of the chicken mixture and roll up, folding ends in if you so desire. Pour remaining sauce over the top of filled tortillas and sprinkle with remaining cheese.
3. Bake at 350 degrees F for 45 minutes.

cook and debone chicken and pour in a can of red enchilada sauce-in saucepan heat up canned red enchilada sauce put in chopped up onion stir together then take a casserole dish and spoon a little sauce in the bottom of dish the take corn tortilla dip in warm sauce for about ten seconds then fill with some of the chicken roll up and place in pan continue until pan is full pour any extra sauce on top then top with Mexican blend of shredded cheese and bake on 350 until bubbly and lightly browned.It is also good to make every third enchilada a cheese one.Yum!
