It's a protection measure taken by your body
Gastric juice is extremely acid and saliva is alkaline.
saliva can neutralize part of the acid somehow protecting the mucosa of your esophagus as the acid comes up.
it is all led by a series of signals in your brain that coordinate vomiting (actually your brain has a full area devoted to vomiting weird don´t you think?)

i believe hormones are released and trigger your salvary glands to secrete more, probably to coat your throat for protection against your stomach acid- i would guess cant remember way too long since A&P
