Use olive oil and balsamic vinegar in equal parts. Its best if the olive oil is good, like $10 a quart or so and the vinegar should be good too, $5 per pint at least. You could use wine vinegar too but it isn't as good. SOmetimes a little garlic added is nice too. Lemon juice makes a good salad dressing too.

The easiest dressing that my Mother made for us when I was growing up was:
Vegetable Oil
Vinegar (your preference, balsamic or win)
Salt (to taste)
Pepper (to taste)
Mix all together (or shake if you put all the ingredients into a bottle).
Pour over your salad.
Enjoy.....

Balsimic Vinegar ir probably the healthiest (no fat), but one of my personal favs is 1/2 cup mayo with 2 T sugar and 2 T milk. Yeah, it's not healthy but boy is it good. Mix together and pour on salad. You can adjust the consistency with the milk, you don't want it too runny.

As a base use vinegar and add olive or canola oil. You can use whichever spices you like and add a teaspoon of sugar to cut the acidity of the vinegar, if desired. If you use balsamic vinegar, it is strong- you will need very little- white vinegar and apple cider vinegar work equally well.

one part vinegar, three parts oil, and something to emulsify such as mustard, purayed vegetables ect... mix vinegar with other ingredients such as your favorite spices first before mixing oil. Add oil and shake together vigoriously and the mustard or vegies will prevent oil and vinegar from separating ... bon appetite!
