silence s'il vous plaît works. Then again just saying s'il vous plaît much like they do at the Roland Garros is enough if it is a situation where people know they need to be quiet.

You can say "silence s'il vous plait" if you're addressing a crowd. If you're talking informally, say to a close friend, you can use Winter Iris' phrase "ta gueule", which roughly means shut your mouth.

"calmez vous, s'il vous plaît!"
"taisez-vous, s'il vous plaît!" (if they're talking too much).
