I put any fruit together that I have on hand, then add canned fruit that sound good. If I use any fruit that will turn, like bananas and apples, I add fresh lemon juice, about 1-2 tablespoons. If the canned fruit has it's own juice, I add it. I drain all canned fruit that has heavy syrup. It's good as is or I sometimes add yogurt. The more fresh fruit; the better the salad. This so simple but soooo good. Hope you like it.

ISLAND FRUIT SALAD
Ingredients needed:

* 1 cup diced pineapple
* 1 cup diced mango
* 1/2 cup diced papaya
* 1 cup honeydew balls
* 1 cup sliced strawberries
* 1 cup sliced peaches
* 1/2 cup blueberries
* 1/2 cup raspberries
* 1 cup sliced bananas
* 1/4 cup Citrus Ginger Infusion
* 2 tablespoons lime juice
* 1/4 cup toasted, flaked coconut
* Oil, for frying
* 8 large square wonton wrappers
* 2 tablespoons powdered sugar
* 1 cup whipped cream
* 1 tablespoon powdered sugar
* 2 tablespoons coconut rum


Preheat a fryer to 360 degrees F.

In a large bowl, combine pineapple, mango, papaya, honeydew, strawberries, peaches, blueberries, raspberries, bananas, ginger infusion, and lime juice. Mix well and set aside.

Place a wonton wrapper inside a large ladle. Press the wrapper down with a smaller ladle and immerse in the hot oil. Fry until golden brown, releasing the second ladle once it will hold its shape. Remove from the oil and drain on a paper towel lined plate. Repeat with the other wrappers. While the wrappers are still hot, sprinkle the inside with powdered sugar.

Combine the cream and the powdered sugar. Whip until soft peaks form. Add the rum and whip to medium peaks. Right before serving, sprinkle the fruit with the toasted coconut and toss again.

Place the wrapper either in a decorative martini or margarita glass, or on a plate. Fill with fruit salad and top with some whipped cream.

Yield: 8 servings

Tangy Poppy Seed Fruit Salad

A very light and delicious fruit dessert with a little twist.
Original recipe yield: 4 servings.

INGREDIENTS:
1 (20 ounce) can pineapple chunks - drained with juice reserved
1 orange, peeled and segmented
1 kiwi -- peeled, halved and sliced
1 cup seedless grapes
1 cup quartered strawberries
1/4 teaspoon grated lime zest
2 tablespoons lime juice
1 tablespoon honey
1 teaspoon poppy seeds

DIRECTIONS:
In a large bowl, toss pineapple, orange, kiwi, grapes and strawberries. In a small cup or bowl, combine lime zest, lime juice, honey, poppy seeds and 1/4 cup reserved pineapple juice. Stir well and toss with fruit.

Select fruit you like, apples, oranges, bananas etc. Peel and dice. Combine in a bowl. Pour the juice from a can of sliced pears over the fruit, add the diced pears and chill. To serve you can add sliced strawberries, grapes, whipped cream or ice-cream.

heres my yummy recipe. 1 jar marachino cherries,halved. 1 sliced banana, 1c seedless grapes,1large apple,chunked, 1large peach chunked, 1 orange sectioned, then chunked whatever other fruit you like, take a container of cool whip, and a box of vanilla pudding,mix it together, then add the fruit. stir it all up and enjoy!

Mine is simple.

I cut up some strawberries, bananas, and apples - put them all in a bowl with some grapes and then dip them in vanilla yogurt. Yum ... now I am hungry!
