I don't know if this works in sauce and you don't say what kinda of sauce but, 1 whole peeled potatoe will take the scorched taste out of many foods. I would certainly give it a try. It can't hurt.

Unfortunately, you don't. You have to dump it and start over. It's not like you can just cut off the burnt part and fake your way through it. Burnt sauce is burnt sauce and the whole mess tastes yucky.

Depending on the kind of sauce you could use liquid smoke.
