Whenever I buy organic/old-fashioned peanut butter (the kind you need to stir and refrigerate), it hardens over time in the refrigerator. And whenever I want to make a PB&J sandwich, the peanut butter isn't spreadable anymore. How do I keep the peanut butter from hardening?

Don't keep it in the fridge. Stir it every other day to keep the Peanut in suspension, otherwise it will separate from the base.

My mother eats organic peanut butter all the time. What she does is just leaves it out on the counter fora while if she knows she wants some later, or digs some out and puts it on a plate and heats it up in the microwave on low for a few seconds at a time.

You *could* leave it out on the counter or in a cupboard if the jar is small enough and you'll eat it up within a reasonable period of time.

Mmmm peanut butter, now I want some!

It is unneccessary to keep peanut butter in the fridge. It's bits of nuts suspended in oil, it would take forever to go off unless you leave the lid off.

Unplug the refrigerator. That's the only way. The other people said leave it out but that's not what you asked. So my way is the right answer. Gimme the 10 points.
