JAMAICAN RICE AND PEAS

1 1/2 c. cooked red kidney beans, liquid reserved
2 cloves garlic, chopped
1 1/4 c. unsweetened coconut milk
Water (enough to make 2 1/4 c. combined liquid)
1 c. rice
2 green onions, crushed
1 or 2 sprigs fresh thyme
Salt to taste
Coarse black pepper to taste

Cook red kidney beans to package directions. Put cooked beans into a large saucepan or pot. Add chopped garlic. Measure all liquids, including reserved bean liquid, coconut milk and water enough to make 2 1/4 cups. Add the 2 1/4 cups of liquid to the beans and garlic in the pot. Add rice, crushed green onion, thyme, salt and pepper to taste. Bring to a boil. Reduce heat. Cover and cook for about 20 minutes or until all liquid is absorbed.

Start with two cups of water and one of rice (basmati's best). Put it in a pan with a little salt and add kidney beans .Tinned ones (1 tin, very well drained) are fine, but if you wan to use fresh you need to soak them for 24 hours, changing the water regularly. Bring it to the boil take off the gas and add a chunk of creamed coconut, about a large teaspoons worth. Turn the gas down as low as you can, put the lid on, leave for about ten minutes. Check to see if the waters gone, (take the lid off and tilt the pan) if not leave it for a few more minutes.
Once al the waters gone fluff with a fork and serve!
This is enough for about two or three people, change the measurements depending on how many you're serving, but keep the ratios. It's also good with brown rice but takes longer.
