in Age of Apocalypse his name is Nate Grey.
as Cable his name is Nathan Dayspring Summers.
Cable is the son of Cyclops and Jean Grey and his real name is Nathan Dayspring Summers (Dayspring is i guess got from his adopted parents).

Well, it depends of which world of X-Men your talking about. Cyclops' children are Rachel Summers from a dystopian alternate future, X-Man/Nate Grey from the “Age of Apocalypse” reality (genetic son and dead), Cable is a son, Stryfe is the clone of that son (dead), Genesis is a grandson (dead), and Hyperstorm is an Alternative Universe grandson coming from Rachel Summers and Franklin Richards.
But he also had two wives Madelyne Pryor (dead and Jean's clone) and Jean Grey-Summers. Jean's children are Rachel Summers (with Cyclops), Nate Grey/X-Man who is a son from an Alternative Universe, Cable who is her adoptive/biological son, Stryfe who is the clone of biological son, and Genesis who is the grandson (dead) from father-Cable with adoptive father Stryfe and the mother Jenskot.
From Madelyne Pryor (clone of Jean) comes Cable her time-traveling son and Genesis her grandson. So you can connect the dots on who's kid is who.

I don't believe that it was ever conclusively established, but in Excalibur, it was suggested that Phoenix (Rachael Summers) was the daughter of Jean and Scott. But Rachael came from an alternate earth in a different timeline, so she may not be the daughter of 'our' Jean and Scott.

Cable... I think in most comics he tries to kill them because of something or other... he's from the "future" versions of the comic where the world is all screwed up... somehow it's because of Jean and Scott and that's why he must go back in time to kill them... or so I remember from a few issues a while back...
