Our hair becomes white if we don't get enough melanin. Melanin is the one that responsible body color including skin color, your eye's pupils color and your hair. We get melanin from the main source of heat the sun. That explain why people in countries near the north pole have blonde hair.

The change in hair color is caused by the gradual decrease of pigmentation that occurs when melanin ceases to be produced in the hair root, and new hairs grow in without pigment. This could be caused by malnutrition or ageing. So far, there have been no methods devised to stop the decrease in production of melanin.
