I think you might have the concept mixed up, usually God is associated with perfection not infinity. A god or "the" God cannot be infinite because it is not a concept measured with time, eventhough one might say that God has always been and always will be, it is still an arbitrary analysis to asociate it with a beginning and an end. The universe for example is something which could then be argued to be infinite or not. In respect with God being perfect, i guess then you could say that there is no proof eventhough all perceptions of "it" are said to be perfect. Perfection is a created concept so us, humans, can have a visualization, or at least a mere rational idea that everything that we experience and everything that we are can always be one step better, which later is followed by another better step, which you could then say that perfection is infinite since saying perfection has an end-point would be an oxymoron since it then would be imperfect. Therefore since there is no proof, or human capabilities for that matter, to experience perfection, then it would be ok to say that it is a simple theory, and if God is said to be perfect, then God would also be a theory, with no proof of existence, ever.

Let's assume that you are correct in that "infinity cannot be proven"
And proceed logically.
Now, it does not follow easily that god cannot be proven just because infinity cannot be proven.
For example God might be finite.
Or proving infinity might have nothing to do with the proof of God altogether.
So, it is not as easy as that you will need more premises to prove that God is unprovable.

Yes
For example, we all say that God "created" the earth. Well, how many gods are there? Buddha in China, Athena (female) in Greece...
It can't be proved that God made earth. It's just saying that God "sort" of changed the earth. It's not proving anything but just a myth and religious belief.
Infinity cannot be proved because it won't ever end. God cannot be proven made earth because science thinks it's Big Bang.
There's such many more examples too.

Nothing can be infinite, because there would be nothing else. Even nothingness is not infinite, because it stops. And the concept of God cannot be proven, because nothing can be proven. What is proof? That you can see something? Our eyes can lie to us. That you can touch something? All of your senses can be deceptive. So we live in a world where our only reality is our perception, and therefore "reality" does not really exist. Kind of confusing if you think about it, but something to ponder.
