Tehre are many great co-op games on the PS2, but two that you can't go wrong on are "Twisted Metal: Black" (a game where you alone or with a friend can use unique vehicles and many weapons to destroy other vehicles), or any of the "Dynasty Warriors" games after the first one (Dynasty Warriors is a game where you play as a commander from the Three-Kingdoms Era in China. The gameplay revolves around demolishing waves or troops in war situations of the period. Although it's known for its sequels being very similar to previous installments, I have personally played Dynasty Warriors 3, and can tell you that it holds lots of great two-player coop fun. It's not as new as Dynasty Warriors 5 (the latest), so it'll likely cost very little, too).

If i were you I'd give up trying to find a ps2 game that both you and your girlfriend will like and buy a Gamecube and get some Mario games. She will probably dig it and there tons of Mario games. Besides gamecubes are real cheap now.

The Baldur's Gate games are great, especially 2. They might even be more fun co-op than single player.

Try rachet and clank with its coop mode. it doesnt take itself real seriously and the newest one Rachet and Clank Deadlocked is co-op. Other wise look on www.gamefaqs.com or google ps2 co-op games.
