You dig potatoes when the tops die off. But you can dig for a meal now and then as soon as you get some big enough. If you plant them in hills or your dirt is very loose you can reach into the dirt and pick them and leave the plant to grow more or bigger ones. Good luck and HAPPY eating. I just had to buy mine at the store :(

depends on if you live in the north or south.
In the northern state you would dig around fall.
Potatoes can be dug up and harvestedin the south whenever they reach the size that you wish to use. Some gardeners sneak a few of the small ones to enjoy as baby potatoes. Just keep in mind that the more baby potatoes harvested earlier, means you’ll find fewer full-sized ones to dig up later in the season.

New potatoes are a real treat when they are golf-ball sized. I guess it depends on how big your crop will be.
