That doesn't bother me so much. It's when he starts tossing his hair and taking of his shades so we know he is staring off into the distance in deep thought.
And as for Vegas, why has Grissom taken to weaing a straw hat? And Nick's hairstyle is changing so frequently, I'm sure it must be a hazard when he is working with hairsamples all day!

Because he stands like that a lot when first assessing a crime scene and he is well known for that pose therefore it helps as an "identifier" in the title sequence
