First of all, the word SAP now is better used to name the company (SAP AG) than to name the ERP, ussually the general aception. SAP have different "solutions" each one can contain various applications. The first one generally named "SAP" is the ERP. There are others applications like SAP CRM, BW, XI, APO, EP, KM, WAS, and some etceteras more.
The ERP is so hughe neither an expert consultant can know all the process it can contain. You need to choose one of them, like HR (human resources), FI (financials), CO (controlling), MM (material management) and so on, but inside each one there must be around 100 to 300 processes.
Maybe, if you have technical skills (over functionals) you prefer to begin knowing the program lenguage, named SAP ABAP/4, then maybe you can attack the new platform, when SAP BSP (business server pages) or SAP WebDynpro, or Java (j2ee) for SAP WAS dominate.
(I know there is some ABAP/4 clon (I think named mini-SAP) but I have no idea if is really true)
