What specifically tempts Eve and Adam to eat the forbidden fruit? What does this tell you about Hebrews’ concept of the nature of human beings?

I think Eve was framed. A male did the writing.

Eve is tempted by her own desire to be like God. This falls into line with the satanistic defintion(being your own gog or godess) I think Adam didn't want Eve to know more than he did so that's why he went along with it.
God's concept of us is that we were all born into sin nature. Not the worlds view of "we are all basically good inside".

New Testament says in God's Word

First John 2:16
For all that is in the world--the lust of the flesh [craving for sensual gratification] and the lust of the eyes [greedy longings of the mind] and the pride of life [assurance in one's own resources or in the stability of earthly things]--these do not come from the Father but are from the world [itself].

Satan/the devil in the form of a snake.

The apple was from the tree on knowledge and GOD forbidden them to eat from it because they did not know of sin, but after eating of the forbidden fruit they had knowledge of sin and was shamed of their nakedness and was kick out the garden of Eden.

Not sure where you're going with this question, but humans have the amazing ability to do the one thing they aren't supposed to. If you put a kid in a room and tell them all the things they can do and one they can't, there's a good chance they'll disobey. It's not a learned ability. We're born with it and we're self centered. We don't want anyone to tell us what to do.
