Cardiovascular exercise!

*What are you talking about, nothing to do with exercise? Take a hematocrit of a triathlete and one of a couch potato. Who's is going to be higher? Cardio will increase the number of red blood cells in your circulation, period. Same way that people who live in high altitudes have higher counts. Yeah, you need iron to make red blood cells, but the your body's iron is RECYCLED. Any extra iron in your diet just taxes your liver. So unless you are a menstrating woman or otherwise experience large volume blood loss, it is not advisable to take supplemental iron. Iron pills make you nauseous for a reason; iron in anything but trace amounts is poision. You list liver as a high iron food; now stop and consider why. Liver is high in iron, because it filters excess iron out of the blood, the same way it removes drugs and other toxins. Consider this before you start eating lots of liver, because you're eating another animal's garbage collector organ.

Other than a blood transfusion (not recommended) the usual way to build a healthy red blood cell count is to manage your iron intake so that are taking enough. In this modern age it's quite normal to find that we are not taking in enough iron. Most kids these days can't even tell the difference between a cabbage and a brussel sprout!

You can take iron by increasing your intake of green leafy vegatables (cabbage, brussel sprouts, green beans, and of course... spinach), or lots of liver and eggs. Some fruit contain a fair proportion of iron too. If this doesn't increase your count enough then it's time to turn to the various iron supplements available.

Be warned that some people have a real hard time taking iron supplements and it's not uncommon to feel ill afterwards or even... ahem... bring the pills back up.
