There is no way of pronouncing it with 1 syllable.
Pronounce it with 3: CA-ra-mel
Or with 2: CAR-mel

caramel is either ca' ra mel (caw' ruh meh ll ) or car' a mel or even carm' el , but none can be reduced to one syllable, because you hear more than one sound of the letters in it. More precisely,
car-a-mel('kar-schwa- m scwah l ='kar-uh-m-uh-l) scwah is the name of the " upside down e" that is always pronounced "uhh" like you were hit in the stomach, regardless if originally spelled with an e, a, or other vowel. It could also be ('k air uh m uh l )
or the mel could be without the scwah and be m -ehh- l .

I know Americans pronounce it 'carmel' but in Britain, 'car-a-mel' is the only correct pronounciation.

I think either are correct....I usually use three, but I hear lots of people only use two...
