Go to your neighborhood grocery store or asian supermarket. Get a bottle of "Oyster Sauce" and sesame oil. Vegetable oil will do if you cannot find sesame oil.
Wash the bok choy and pull the apart the sections. Cut the stems and leaves into chunky pieces, about 1/2 inch pieces.
You can cook it 2 ways
In a pot of boiling water, dump the bok choy and boil for 3-5 minutes. If you like tender veggies, cook for 3 more min.
Remove from water, put in a serving plate. Drizzle oyster sauce (about 4 tsp) over the veggies, and a little drizzle of sesame oil. Mix and eat warm with your meal as a veggie dish.
Or, in a skillet or wok, add 3 tsp cooking oil. Heat skillet to med/high, and then add the veggies. Stir fry. Turn heat down to med/low. Add a dash of oyster sauce (maybe about 3-5 tsp) and a drizzle of sesame oil (a little goes a long way!). Stir fry. Add some crushed garlic. Stir fry.
You can add meat with the dish or serve alone. Serve hot.

Bok Choy is a very Asian veggie, so I'd advised you add them as part of the veggie compliment in an Asian dish. They go great with noodle dishes or stir fried meat dishes as part of the veggie accompaniment.
You can try tossing up an Asian salad as well, using bok choy, by cutting them up into nice, bite-sized pieces, mixing it with soy-simmered shittake, cubes of tofu and chopped baby onions, drizzled with a little olive oil, chinese vinegar, a bit of salt and if you'd like you can mix it with an Italian vinegarette to add to the taste.
Bok Choy, especially the baby variety (basically the 'mini-me' of your average Bok Choy), tastes great in most Asian dishes, and you can use it in any Western dish as well.

You put it in stir fry! Take a little oil, heat it up and add shallots, garlic, and ginger, cook for like 30 seconds and then add a bunch of veggies- ANY veggies, pretty much! I like red peppers, baby corn, water chestnuts, carrots, snow peas, and mushrooms. Cook those until tender, (just a few min), and then add some soy sauce, (not too much! It's salty!) and your chopped bok choy. It only takes like 30 seconds, and then you're done! And it's really good, and really healthy!
Serve over white rice, or on it's own!

bok choy is great in egg rolls, just chop it up and stir fry it with some cabbage, carrot, green onion and bamboo shoots, roll it up in some egg roll wrappers and deep fry until golden brown...yum!!!

It tastes kind of like nothing when its raw but you can put it in a salad. Also if you stir fry it up with some soy sauce it tastes pretty good.

Both are good for you, each fruit/vegetable has different vitamins. And so as more variety, as better. Vegetables have generally less sugar than fruits.
