I am white, my husband is Mexican. We had English-speaking priest and Spanish-speaking priest. We did some American and some Mexican wedding traditions during the reception. Both sides were very happy...
Or, you can have the ceremony is one language and a translation up on a projector/overhead - may not be as personal though. Music could be a mixture. Have some traditional Catholic hymns sung in Spanish.

Try doing some parts of the service in Spanish and other parts in English. Have bulletins made up in all Spanish, and others in all English. Have a program inside listing which parts will be in what language. This way, when it reachs a point in which it is spoken in Spanish, your English speaking guests can follow along by reading the bulletin. And then visa versa.
Also, try to incorporate traditions, music, etc. from both heritages. It'll make the ceremony more meaningful for everyone involved.

Have am english ceremony and a mexican reception. That way latinos can do the best where they do best: HAVE A GOOD PARTY AND HAVE GOOD FUN!
Incorporate HIS side of the family in to the english ceremony. Have his little cousins be the flower girls, make his sister be the bridesmaid. etc. So all that stiff but important stuff be done in hounous of your soon to be hubbies family. I'm sure uncle Paco y tia Lola won.t mind cuz they just wanna keep on going to the reception and all of your friends and younger crown speak english anyway...besides, in a party, who cares who speaks what...everybody will be one happy family after a few tequilas.
Buena suerte y felictaciones! Have fun!

Do everything twice, once in English, once in Spanish. Make the vows short and sweet. My sister and her fiancee have the exact same thing going on.

IF YOU WANT TO MAKE EVERYONE HAPPY,YOU TWO HAVE TO AGREE ON SOME THINGS FIRST.IF NONE OF HIS FAMILY SPEAKS ANY ENGLISH IT WOULD BE A GOOD IDEA TO HAVE AN INTERPRETER HANDY.SECOND YOU BOTH HAVE TO DECIDE HOW THE WEDDING IS GOING TO BE PERFORMED AND MAKE THE PROPER ADJUSTMENTS.THIRD,BEFORE YOU BOTH WED IT WOULD BE A GOOD IDEA TO HAVE THE FAMILIES MEET SO THAT WHEN YOU DO WED IT WON'T BE SO UNCOMFORTABLE.JUST REMEMBER TO KEEP SOME OF BOTH OF YOUR TRADITIONS IN THE WEDDING AND I'M SURE EVERYTHING WILL BE FINE.
