Carrot cake is never quick........but this one is rated "easy" on one of my fav. recipe websites.
2 eggs
1 cup sugar
1/2 cup vegetable oil
1 1/2 cups grated carrot, about 3-4 carrots
2 tablespoons orange juice
1/2 cup chopped walnuts
1 1/4 cup flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
Preheat oven to 350 degrees. Grease and flour a 9 inch square baking pan.
In a large bowl, beat together the eggs and sugar until creamy. Stir in the vegetable oil until well combined. Add the grated carrots, orange juice and walnuts and mix well. Add the flour, baking powder, salt, cinnamon and nutmeg and stir until just combined. Pour into prepared baking pan and bake for 25 - 30 minutes or until a toothpick inserted in the center comes out clean.
Allow cake to cool and then frost

have made this many times and you can leave out the raisons if your prefer..............Happy Cooking For the cake: 175g (6oz) wholemeal self-raising flour 1 level tsp baking powder 1 level tsp ground mixed spice Pinch of salt 150ml (1/4 pint) sunflower oil 175g (6oz) soft light brown sugar 3 medium eggs 100g (3 1/2oz) raisins 250g (8oz) carrots, peeled and grated For the topping: 200g (7oz) cream cheese Few drops vanilla extract 3-4 level tbsp icing sugar Orange and green food colouring 1. To make the cake, tip the flour into a bowl and stir in the baking powder, spice and salt. Then stir in all the remaining ingredients until well mixed. Pour the mixture into a 1kg (2lb) loaf tin, buttered and lined with a strip of baking parchment. 2. Bake in centre of oven at 180°C/350°F/gas 4 for about 1 hour, until just firm to the touch in the centre. A skewer should come out clean after being inserted into the middle. 3. Remove from the oven. Allow to cool in the tin for 10 mins, then turn out on to a wire rack and leave to cool completely. 4. To make the topping, beat together the cream cheese and vanilla extract. Add icing sugar to taste. 5. Colour a small amount of icing orange and a small amount green, and use to fill a disposable piping bag each. Spread the remaining uncoloured icing over the top of the cake. 6. Cut the end off the bag with the orange icing to give a small hole, and pipe tapered zigzags, to resemble carrots. Cut the end off the green icing bag into a 'V' shape and pipe leaves. Top tip: You can wrap the undecorated cake in a freezer bag and freeze for up to 3 months. Defrost before icing.

Ultimate Carrot Cake
Betty Crocker's Ultimate Cake Mix Cookbook shares a recipe! Here’s home-baked carrot cake without the hassle of shredding carrots. Yum!
1 package Betty Crocker® SuperMoist® carrot cake mix
1/2 cup water
1/2 cup vegetable oil
4 eggs
1 can (8 ounces) crushed pineapple in juice, undrained
1/2 cup chopped nuts
1/2 cup shredded coconut
1/2 cup raisins
1 tub Betty Crocker® Rich & Creamy cream cheese ready-to-spread frosting
1 . Heat oven to 350ºF. Grease and flour bottoms only of 2 round pans, 8x1 1/2 or 9x1 1/2 inches.
2 . Beat cake mix, water, oil, eggs and pineapple in large bowl with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes. Stir in nuts, coconut and raisins. Pour into pans.
3 . Bake 8-inch rounds 40 to 45 minutes, 9-inch rounds 28 to 32 minutes, or until toothpick inserted in center comes out clean. Cool 10 minutes. Run knife around side of pans to loosen cakes; remove from pans to wire rack. Cool completely, about 1 hour.
4 . Place 1 cake layer, rounded side down, on serving plate. Spread with about 1/3 cup frosting. Place other layer, rounded side up, on top. Frost side and top of cake with remaining frosting. Store covered in refrigerator.
High Altitude (3500-6500 ft)
For main recipe or variation, do not use 8-inch pans. Heat oven to 375ºF and decrease oil to 1/3 cup. For main recipe, stir 1/3 cup Gold Medal® all-purpose flour into dry cake mix. For variation, stir 1/4 cup flour into dry cake mix.
Success
To cut cake easily, use a thin nonserrated knife.
