Tonight I was making a cheese and cracker tray and started cutting up some swiss cheese that had been unopened in the pack. I took a taste of it and it was disgusting but I had already swallowed. When I looked the expiration was JANUARY! There was no mold or anything on it so I think its alright as cheese is nothing but mold anyway but just wanted a second opinion.

Usually, if a cheese is old you might get mold. (Hey that rhymes!) But if you cut it off it should be okay. It may be that it was just too old, or it picked up odors from the fridge, or it was just lousy cheese to begin with. My rule is that if I put something in my mouth that tastes really bad, I don't eat it. Pretty simple, huh?

Swiss cheese doesn't expire, but the date it's supposed to be sold or consumed by does. If the cheese is only mildly moldy, trim off the mold and eat it. The flavor will probably have improved by then. After all, the cheeses mold when they are set to cure, then the mold is trimmed off before packaging and distribution for sale.

I wouldn't think it's bad. Cheese is basically fermeted anyways. I'd say, look at blue cheese. This is, like pure mold!
