Cut up your potatoes and carrots, sprinkle the roast with garlic powder, onion powder and pepper. Add your veggies that you cut up. Add enough water to go almost 1/2 way up the side of the roast, cook at 350 for about an hour to an hour and a half.

too bad you didn't use a slow cooker!
EASY ROAST BEEF
1 1/2-2 lbs of chuck roast
1 packet of Lipton dried onion soup mix
2 potatoes, chopped and peeled if you wish
2 carrots, chopped and peeled if you wish
1 celery, chopped
1 tsp fresh or dried herbs like oregano, basil, cumin.
1 bay leaf, optional
3 tsp corn starch

In the crock pot add the onion soup mix, corn starch (or 5 tsp flour), the herbs and 2 cans of water.
Mix until dissolved. Add the meat, the veggies and mix.
Add additonal water til its barely covering the veggies.

Turn on crock pot on med/low at 8 am, by 6 pm its done.
