You can cook them by putting a good marinade on it, something like apple juice and cook them real slow as you already do!

Make sure that when you smoke them, place the fat side up. Try wrapping loosely in aluminium foil (allow some openings for the smoke to permeate). The fat runs through the meat and settles in the aluminium foil, then steams back through the meat. Unwrap approximately 30 to 45 minutes before they are done to crispen outer layer.

actually, your suposed to steam the ribs, then you grill them, rubs are exceptionally nice, and marinades. The ribs of the pig arent to be smoked. pork belly bacon, fresh ham and pork products such as those.

I really don't know, I know how to smoke golden virginia, drum etc but pork ribs? they won't fit in the papers
