Dude, read the manual. It just occured to me that the D70 also has a tendency to underexpose by about 0.5 stop in order to preserve the highlights. You can change that setting too, if you want.
With these adjustments, the D70 will produce the same 'pop' as point & shoots. In fact, those are pretty much the default settings for the D50.
Just keep in mind that you can do all of those adjustments on your PC, too. When you let the camera do it for you, however, you CAN'T go back and recreate the image as it actually was. Stuff like over sharpening and blowing highlights is not reversable.

Do you have adobe photoshop or another image editing software suite? They're great and you can do some really wild stuff with them.
