i love 2 cook but dont have much 2 work with. i have dreamed of making my first whole baked chicken(im 13) however all the recipies i can find R 2 fancy. my mom says 2 just use salt pepper & butter but i would feel better if i had an organized recipie before me. does anyone have a very very easy chicken recipie to share 4 a person making a whole chicken by herself for the first time?

Your mom is right, its as simple as a lil salt, pepper and butter. But i know your worries, you need a guide something to fall back on so this is what i got for you:-)
Place oven rack on second level from bottom. Heat oven to 500 degrees.
Remove the fat from the tail and crop end of the chicken. Discard the neck and giblets or freeze for making chicken stock later. Reserve chicken livers for another use.
Stuff the cavity of the chicken with the garlic and butter, if using. Season the cavity and skin with salt and pepper.
Place the chicken in a 12-by-8-by-1 1/2-inch roasting pan, breast-side up. Put in the oven legs first and roast 50 to 60 minutes, or until the juices run clear.
... Sometimes as a treat i like to toss in there some new potatoes (red) and carrots they soak up all the juices and become very tender and a great add on to the meal. Good luck in your first chicken :-) let me know how it turns out.

You don't have to cook the chicken whole to make a "whole" chicken. Here's an easy recipe and it feeds a family of 4

Chicken, Potatoes and Veggies
Cut up your whole chicken.
Take the leg and with a kitchen knife cut along the thigh area, gently pulling apart the leg from the body. With the knife, cut between the joints. You can cut the drumstick away from the thigh by finding the joints.

Remove the wing from the breast, and then cut the breast off the body cavity. Cut the body in half by following the spine.

In a large bowl, add 1 cup water and 2 eggs. Mix well.

Coat the chicken with an egg/water mixture, roll in seasoned bread crumbs. Put on slightly grease baking pan, skin side up. Add crushed garlic to the top and bake 40-45 minutes at 325 degrees. You can cheat and get precrushed garlic at the store... they're ina jar. Its not as tasty but its fast and easy!

If you're real lazy, get some shake n bake type coating, and coat the fresh chicken with that mixture. Tastes just as good.

While the chicken is baking, make some fresh mashed potatoes.
If you have a microwave its super easy.
In a large microwave safe bowl, add 3 potatoes, washed and cut. Peel if you wish. Poke a few holes in it with a fork.
Fill the bowl with water, put in microwave, cover with paper towel or waxed paper, microwave on high for 15 minutes. If you don't have a big enough bowl, microwave 1 and 1/2 potatoes for 8 minutes.

If you don't have a microwave, wash and cut the potatoes and put in a large pot. Fill pot with water until the potatoes are covered. Turn on heat to high and cook until bubbled. Then lower heat to med/high and cook 40 minutes or until potatoes are tender.

When the potatoes are done (fork should slide easily into it), carefully drain the water. Return to pot or bowl and Mash

If you do not have a potato masher, use the fork and break the potatoes down until you can mash it. Add a splash of milk about 1/4 cup, a gob of butter (or 1/2 stick) and a dash of salt. Mix well. For creamier potatoes, add more milk... but not too much milk or it'll turn mushy. Let the potatoes sit 5 minutes before serving.
To make the potatoes more flavorful, add crushed garlic or some spices like oregano, basil or dill.

Then for veggies, you can serve fresh veggies (ie: corn on the cob, carrots) or frozen or canned.. whichever you prefer

I found this recipe online, but it's very similar to how I make my chicken. I just don't put the butter underneath the skin, just on top.


Roast Chicken

1 whole chicken, about 3lbs
butter
salt and pepper
1 whole bulb of garlic (optional), with the outside papery layers removed

Preheat the oven to 375ºF.
Wash and dry the chicken. Thoroughly rinse and dry the inside cavity as well. Salt and pepper the cavity and place the whole bulb of garlic inside.

Take your finger and slide it under the breast skin. Place dabs of butter in 2 or 3 spots on each side of the breast, under the skin. Take about 2 ounces of softened butter and spread it over the chicken with your fingers. Salt and pepper the outside of the chicken to taste.

Arrange the chicken in a covered roasting pan. Roast at 375ºF for about 1 1/2 hours, basting occasionally to keep it moist.

Carve and serve.

easy chicken recipe; 4 chicken breasts parmesan cheese italian dressing (kraft zesty italian is best!) Pour dressing over chicken bake 30 minutes @350 sprinkle with parmesan cheese bake 15 more minutes. Great with rice, pasta or just veggies! Good beteewn two slices of garlic bread as a sandwich:)

- Pre-heat the oven on about 200 degrees celsius for like 15 minutes.

- Put a bit of butter or oil in an oventray.

- Rub salt and pepper on the chicken and put it in the tray, and place it in the oven. Leave the temperature on the same level.

- After half an hour add a few cloves of garlic (uncut and unpeeled) in the tray. You might also put some cut onion with it, in big chunks. A bit of thyme (a teaspoon) gives a nice mediteranian taste if you want some extra flavour.

- Leave it in the oven for an hour.

heat oven to 350, take out any thing thats inside the chicken(gizzards or gravy packet)...put in a roaster pan and cook 20 minutes per pound= 4lbs= 80 minutes! If it does not say how much the chicken weighs------ get on your scale and weigh yourself...then do it with the chicken in your hands..there is the weight.
