This is simple and very good.
Beef and more
One arm roast or any inexpensive beef.
Large can tomatoes
Onion, chopped fine or rough
Bay leaf
Rice
Salt and pepper
Brown the beef in a little olive oil
Spray a baking pan with lid (or use foil)
Put the beef with salt and pepper in the pan
One large whole Bay leaf
Measure rice and pour the rice in the pan
Empty the tomato juice in a measuring cup, add water or stock to equal the amount of liquid the rice needs. (remember, one cup dry rice needs 2 cups liquid)
chop/squeese/snip the tomatoes dump over the beef
Add the liquid with a little extra (like a half cup)
Cover
Oven cook about an hour at 350 or so--
Remove the bay leaf before serving or make sure everyone doesn't eat it--
This is a good Sunday Dinner-- a little cooler oven-- 300 or so-- and by the time you are home from Sunday School and church-- dinner only needs bread and salad.
enjoy

Chicken, Potatoes and Veggies
Get some fresh chicken breasts, cut it up. Coat it with an egg/water mixture, roll in bread crumbs and bake 30 minutes at 325 degrees.
If you're real lazy, get some shake n bake type coating, and coat the fresh chicken with that mixture. Tastes just as good.
While the chicken is baking, make some fresh mashed potatoes.
If you have a microwave its super easy.
In a microwave safe bowl, add 2 potatoes, washed and cut. Peel if you wish. Poke a few holes in it with a fork.
Fill the bowl with water, put in microwave, cover with saran wrap or waxed paper, microwave on high for 8 minutes.
When the potatoes are done (fork should slide easily into it), carefully drain the water. If you do not have a potato masher, use the fork and break the potatoes down until you can mash it. Add a splash of milk, a gob of butter and a dash of salt. Mix well. For creamier potatoes, add more milk... but not too much milk or it'll turn mushy. Let the potatoes sit 5 minutes before serving.
Then for veggies, you can serve fresh veggies (ie: corn on the cob, carrots) or frozen or canned.. whichever you prefer

Well, I've got a recepie for tuna spread. If u like a little kick in ur food, this is good too. It's more of an orderve I think, but I make sandwiches out of it too.
You need: A mixing bowl
1 can of tuna
a tsp of minced ginger(as desired)
1 minced onion(as desired)
1 minced jalepeno pepper(as desired)
2 tbl spoons of Mayo(as desired)
1 tblspoon of mustard(as desired)
A boiled egg that's in little cubes
Mix it all up in the bowl real goodand serve as dip with crackers or on bread. All the ingredients can be modified for personal perferences. I like this a lot, and it's simple, it'll probably take 30 minutes to prep, tops. That all depends on speed, it takes me that long, cause I'm slow.

Chicken and rice
Put about 4 to 5 cups of minute rice into a greased 9X13 baking dish. Add one can of cream of mushroom soup and one can cream of chicken soup. Mix in milk or low sodium chicken stock until the mixture is still kinda' thick but almost soupy. You can add onion and/or garlic powder, pepper etc. if you like. Mix in a bunch (maybe a cup?) of grated cheese .....any kind you like. I use the colby-jack mix. Add 6 to 8 pieces of skinless chicken (I use thighs). Push them into the mixture so that they are covered. Add more cheese on the top.
Bake at 375 for an hour or so. I use a glass dish so I can see the bottom during baking. When the bottom is golden brown...it's done. Enjoy!
