What is the best way to ripen and store tomatoes?
Place them at room temperature in a single layer, shoulder-side up, and out of direct sunlight. To store ripe tomatoes for any extended period of time, keep them between 55 and 65 degrees.

If you put tomatoes in the fridge they will not taste near as good as leaving them set out. But them before they are real ripe and they will last longer.

you can jar them as you would fruit.
or you can freeze them but they will only be good for cooking after they loose the firmness ,as they do in the jars,
you can also make jam out of them.
or liqiudize and freeze the sauce.
and what is very nice is sun dried tomatoes.
cut open flatten and dry in the sun
