MOZZARELLA AND TOMATO SAUCE OMELETS
1 small onion, quartered
2 carrots, peeled, cut into 2-inch pieces
2 celery stalks, cut into 2-inch pieces
2 tablespoons olive oil
1 28-ounce can Italian plum tomatoes, drained, juices reserved, chopped
1 teaspoon dried marjoram, crumbled
1 teaspoon dried basil, crumbled
1/4 teaspoon sugar
Salt and pepper
12 eggs
6 teaspoons water
6 tablespoons butter 8 ounces mozzarella, grated
Place first 3 ingredients in processor. Chop finely using on/off turns. Heat oil in heavy large saucepan over medium heat. Add chopped vegetables and sauté until tender and beginning to brown, about 15 minutes. Add tomatoes, reserved juices, herbs and sugar. Season with salt and pepper. Cover partially and simmer until tomato sauce thickens, stirring occasionally, about 35 minutes.( Can be prepared up to 1 month ahead. Freeze.)
Whisk 2 eggs with 1 teaspoon water until well blended. Melt 1 tablespoon butter in nonstick skillet over medium heat. Pour egg mixture into skillet. Using spatula, lift edges of eggs as they cook, letting uncooked part run underneath until omelet is cooked but still creamy. Spoon 2 tablespoons tomato sauce over half of omelet. Sprinkle with 2 tablespoons mozzarella. Slide out onto plate, folding omelet over filling. Keep warm. Repeat process with remaining eggs, water, butter, sauce and cheese. Spoon any remaining tomato sauce over omelets.
Serves 6.
GREEN ONION AND MUSHROOM OMELET
Try a green salad with Champagne vinaigrette on the side, and some dinner rolls. Serve miniature fruit-filled pastries after.
6 ounces crimini mushrooms
2 tablespoons plus 2 teaspoons butter
5 tablespoons chopped green onions
1/4 cup dry vermouth
6 large eggs
1 tablespoon water
1/4 teaspoon salt
1/4 teaspoon ground black pepper
Finely chop mushrooms in processor. Melt 2 tablespoons butter in medium skillet over medium-high heat. Add mushrooms and 3 tablespoons onions; sauté 3 minutes. Add vermouth and boil until evaporated, about 1 1/2 minutes. Season with salt and pepper.
Whisk eggs, 1 tablespoon water, salt, and pepper in medium bowl to blend. Melt 1 teaspoon butter in small nonstick skillet over medium heat. Add half of egg mixture. Stir with back of fork until edges begin to set. Cook until omelet is set, lifting edges with spatula to let uncooked egg flow underneath, about 2 minutes. Spoon half of mushroom mixture down center of omelet. Fold both sides of omelet over filling and transfer to plate. Repeat with remaining butter, egg mixture, and mushroom mixture. Sprinkle omelets with remaining onions.
Makes 2 servings; can be doubled.

In a "Missouri scramble," we put in bell peppers, mushrooms, onions, even diced potatoes if you like. Chives are good with eggs. And this is a perfect seasoning for eggs, if you want to get fancy: Fines Herbes - Place all of the following ingredients in a blender container. Cover and blend on high speed 10 seconds. Store in a tightly covered container.
1 tablespoon dried basil
1 tablespoon dried marjoram
1 tablespoon dried oregano
1 tablespoon dried tarragon
1 tablespoon dried thyme
2 teaspoons dried rosemary
2 teaspoons dried sage

It depends on what you like...I like mushrooms, onions, cheese, salsa, sometimes even a green pepper! Kinda like an omlet or crumble your bacon and sausage up in the eggs along with all the other goods I've mentioned and wrap it up in a warm tortilla and have a home-made breakfast burrito!! (yum yum, you know it will be better than any mcdonalds breakfast)

Cheese. Salsa. Tomatoes. Onion. Green onion. Garlic. A variety of meats. Beans. Rice. Green chile. Potato. Avocado. Mushrooms. Peppers. Eat them on a sandwich. Eat them in a tortilla-- breakfast burrito. Mix them in Ramen soup -- like egg drop soup.

I received the following email this week but I had to delete the picture. Looks like a good idea:
ZIPLOC OMELET
(This works great !!! Good for when all your family is together. The best part is that no one has to wait for their special omelet !!!)
Have guests write their name on a quart-size Ziploc freezer bag with permanent marker.
Crack 2 eggs (large or extra-large) into the bag (not more than 2) shake to combine them.
Put out a variety of ingredients such as: cheeses, ham, onion, green pepper, tomato, hash browns, salsa, etc.
Each guest adds prepared ingredients of choice to their bag and shake. Make sure to get the air out of the bag and zip it up.
Place the bags into rolling, boiling water for exactly 13 minutes. You can usually cook 6-8 omelets in a large pot. For more, make another pot of boiling water.
Open the bags and the omelet will roll out easily. Be prepared for everyone to be amazed.
Nice to serve with fresh fruit and coffee cake; everyone gets involved in the process and a great conversation piece.
Imagine having these ready the night before, and putting the bag in boiling water while you get ready. And in 13 minutes, you got a nice omelet for a quick breakfast!!!
I think my kids are going to like this!
I used tomatoes, ham, green onions, cheddar cheese and mushrooms in this one! MMMMMMMM . . .MMMMMMM good!!!
Try it. . . .it really works!!! Just think, no frying pans, or grill to wash.

If you're feeling a little Mexican you can try some salsa. Or maybe just some different kinds of cheese (other than American). Sharp cheddar is a favorite of mine.

You can put some Ketchup on the after they are cooked.You can also make an omeletusing things such as ham, tomatoes, peppers, rotel tomatoes,cheese, bacon bits, anything you can imagine... Good luck...

mushrooms, ham, onion, tomato, parsley, pepper, salt, and lots of cheese, also add some hot sauce when done. taste great.
you could also make them into quesadillas by grilling 2 soft taco shells and put the eggs in them when done.
