You can pick under-ripe cherries. There isn't a specific color that you'll need to look for, but try feeling the fruit a bit. If it feels overly hard and not 'ready', you should probably wait a while longer before picking. Green cherries, nonetheless, make a lovely drink when juiced with lemons and sweetened. If you're planning on picking cherries in order to make a beverage, the cherries don't need to have totally ripened as using them as they are can give a nice tangy flavor. If you're intention is to make pastry however, you may want to wait until the red begins to show :).

Cherries do not ripen on their own too well once they're picked. It is best to let them ripen on the tree and pick them then. As far as the birds are concerned, there are all kinds of little tricks to scare them away. Fake owls are pretty good, as well as tinsel and other moving objects placed all around and even in the tree. You may even have to go so far as to get netting or something if the birds are very persistent. Good luck!

Put a net over your tree to keep away the birds. You could add some aluminum peices to scare the birds. I don't think the cherries will ripen picked early.

try ripening about a pound of your cherries on the counter in a paper bag, if it works great, if not you only lose a pound. I wouldnt pick them green, they'd rot before you could get them ripe enough to eat. maybe just as they are beginning to turn color...

You can pick them but they won't taste good. They'll give you a belly ache if you eat them without ripening.

i would find a way to keep the birds away, either by netting your tree to keep them off, or leaving a dog or hair or something around the area to keep them away. or get an outdoor cat, they help keep the bird population down.

the sweet cherries are red but not a real dark red. last year the birds cleaned the entire tree and I never
got one cherry. I had wondered if I could pick the sweet cherries not the tart cherries. birds do not touch
the tart ones. I wonder if I use spray if the birds will leave them alone.

you can pickle them in a sweet kind of marinade. they are unusual, but good. just don't eat a lot of them. they are more a snack. if you eat too many ............. well, you know.
