Because it will start to grow mold after a while and the liquid stuff that starts to develop on the top after the first time you use it, will also go bad.

yes indeed there is an expiration date on sour cream. It is a dairy product. You will find that it sours like milk, but it does take a little longer. You will find the expiration usually on the bottom of the package.

because after a while it can move into the next phase of the souring process, which will taste yucky compared to before.
any dairy product is safe to eat so long as its not growing mold.... unless its cheese and then you can cut the mold away. Some people actually eat moldy cheese as a delicacy.
