Stand up the mango so the stem part is up. Slice the flatter sides of the mangos as close as you can to the seed inside. Do this on both sides and cut the remaining little sides. Then you can just eat around the seed.

Stand the mango up so the narrower end is at the top. Near the middle of the mango, slice downward, staying as close to the seed as possible. Set the mango piece down, with the skin side on the counter. Make several cuts along the length of the mango piece, cutting just to the skin but not through it. Now make several cuts across the width, again, not cutting through the skin. You will now have mango squares, still attached to the skin. Hold the mango piece and slightly bend both ends back. You can now easily cut the squares off and serve.

It's hard to cut around the pit with a knife. I saw the chef Bobby Flay on tv recommend a mango slicer, like a round thing with blades that you just push down on the mango and it gets cut into 4 pieces around the pit. Don't know where you get one though, maybe Williams Sonoma?

Bed Bath and Beyond has a Mango Slicer for about $12.00. Other similar products are out there and I find them a LOT easier than doing it with a knife!

Make two longitudinal cuts, parallel, but on different sides of the seed, as close as you can.

You will have 3 pieces. The two pieces with most 'flesh' are the ones without the seed.

The piece with the seed can have the skin peeled off by hand.
